Mann’s Five - a - Day Hawaiian Cupcakes

Mann's Broccoli Cole Slaw®, microwave in bag for 7 minutes or until tender |

Applesauce, unsweetened |

Sugar |
| 3/4 cup |
Vegetable oil |
| 3 tsp |
Vanilla |
| 3 cups |
Flour |
| 1 tsp |
Salt |
| 1 tsp |
Soda |
| 1 1/2 tsp |
Baking powder |
| 1 1/2 tsp |
Cinnamon |
| 1 cup |
Toasted coconut |
| 1 cup |
Pineapple, drained canned tidbits |
To Prepare:
Preheat oven to 325 degrees.
With electric mixer beat; eggs, applesauce, oil, sugar, cooked-chopped Broccoli Cole Slaw® and vanilla together. Add flour, salt, soda and baking powder to mixture and mix until well combined. Add cinnamon, coconut and pineapple and stir until well combined.
Fill 24 paper lined cupcake tins with batter (a standard ice-cream scoop for a perfect measurement).
Bake at 325 degrees for 25 minutes. Cool and frost with your favorite whipped dessert topping laced with ginger syrup or coconut extract. Garnish each cupcake with toasted coconut.
