Lemon Rainbow Salad™

Green bell pepper, cut into strips |

Red bell pepper, cut into strips |
| 1/2 med |
Red onion, sliced into thin strips |
| 2 tsp |
Lemon zest, grated |
| 2 Tbsp |
Parsley, chopped |
Dressing: |
Ingredients |
| 1/2 cup |
Mayonnaise |
| 1/4 cup |
Lemon juice, fresh |
| 2 Tbsp |
Olive oil |
| 1/2 cup |
Sour cream |
| 1 Tbsp |
White wine vinegar |
| 1 Tbsp |
Horseradish, prepared |
| 2 Tbsp |
Dijon mustard |
| 2 Tbsp |
Sugar |
| 2 Tbsp |
Corn syrup |
| 1 tsp |
Salt |
| 1/2 tsp |
Black pepper |
| 1/2 tsp |
Celery seed |
To Prepare:
Combine dressing ingredients starting with mayonnaise by whisking them together in a large bowl. Refrigerate for 2 hours. Dressing may be prepared 1 day in advance.
Combine remaining ingredients, toss to mix well. Pour on dressing to taste. Toss again and serve. Chill for 1 hour before serving.
